Stuffed Celery

Extra Low Glycemic Recipe

Ingredients:

Serves 4

30 calories, 3 g carbohydrate, 4 g protein, .3 g fat
1⁄2 cup reduced fat cottage cheese
1 scallion, chopped
1/8 tsp. prepared horseradish
1/8 tsp. Worcestershire sauce
Pinch of garlic powder, paprika, for garnish
4 ribs of celery, cut into 3 inch pieces

In a small bowl, thoroughly combine cottage cheese, horseradish, Worcestershire sauce, scallion, and garlic powder, mix. Spoon into celery and sprinkle with paprika.
