1 large zucchini
1/2 CUP fresh parmesan cheese
1/2 CUP mozzarella cheese
1/4 CUP nonfat milk
1 TSP garlic powder
1/4 CUP finely chopped onion
Cut zucchini in half - lengthwise
Use spoon to dig out center section, which will form a "canal" inside the zucchini.
Add center section into a food processor and add mozzarella, milk, garlic, and onion.
Mix well and pour into the canal of zucchini. Sprinkle parmesan cheese on top.
Bake in oven at 350 for 30 minutes. Parmesan cheese on top should be golden brown.
Serve warm.
*Can add artificial bacon bits to this recipe for extra flavor.
