Tasty Pasta

Makes 2 HUGE lo-cal servings! And, it’s tastier than it looks!!

Ingredients:

1 package pro-slim pasta
1 Cup broccoli
1 medium eggplant
1 large portabella mushroom
2 celery stalks
1 large tomato
1/4 large red onion
1 medium squash
1 red bell pepper
2 chili pepper (mild or hot, depending on taste)
1 LB ground buffalo
16 OZ jar of lo-cal marinara sauce (one w/about 50 cal per serving)

First chop up all the veggies into bite size pieces.
Then sauté them in a little olive oil.
While you are sautéing, brown buffalo in another pan. I use pam spray to do this. Once browned, add marinara to buffalo. I use about ½ half to 3/4th the jar.
Boil pasta (I package per person)

Drain pasta then add veggies. Top with buffalo sauce.
If vegetarian, omit buffalo and just add warm sauce on top!

May add ground pepper or parmisian to taste.
