1/4 c. white vinegar
1/2 tsp. onion powder
1 tsp. honey
1/2 tsp. cumin
1 tsp. canola oil
1/4 tsp. garlic powder
3 1/2 oz water
1/8 tsp. oregano
1/8 tsp. black pepper
1 tsp. arrowroot
*Combine in a sauce pan, heat and stir to thicken.
1 Tbsp. orange juice
1 tsp. lemon juice
* Add to dressing and chill
2 c. orange, sliced thin
1 c. purple onion, sliced very thin
2 c. zucchini, sliced thin
*Combine in a flat bottom bowl, pour dressing over all and marinate for at least an hour.

*Spoon into lettuce cups right before serving.
NOTE: This is an outstanding salad. However, its success is dependent upon very fresh zucchini and flavorful oranges.
