Makes 2 servings. This is a great snack!
4 Whole wheat Lo-carb tortillas
12 OZ can of white chicken
1/4 Cup Salsa
4 Kraft Fat Free cheese singles
1/4 Cup Red onion
1 TBSP Olive oil
Warm frying pan with oil. Add red onions and cook till transparent and soft. Add chicken and favorite salsa. Use spatula to break up chicken till it is shredded.
Remove from heat.
Place one slice of cheese on each tortilla.
Spoon out the chicken and salsa mixture onto two of the tortillas. Place the other two tortillas with cheese slice on top of them. You now have two quesadillas.
Cook one quesadilla at a time in frying pan with a little olive oil. Flip when quesadilla browns. Brown both sides and eat.
