Low Carb French Toast

Ingredients:

4 slices of low carb bread (Atkins country wheat works great)
3/4c egg whites or egg beaters
½ 1/4c. soy or nonfat milk
1 tbsp splenda
1 tsp. cinnamon
1 tsp. vanilla extract
Pam Spray - butter flavored
optional: 3/4c blueberries & raspberries

 
Heat skillet to 375 degrees.
In medium size mixing bowl, combine all ingredients except bread and berries.
When mixed thoroughly, dunk low carb bread into mixture. (One slice at a time, make sure to dunk both sides.) Bread should be thoroughly moistened.
Spray skillet with Pam cooking spray. Place bread on skillet.
Cook till bread browns. Then flip to brown other side.

 

Cut bread diagonally and sprinkle with Splenda (looks like powdered sugar) . Add fresh berries if desired.

 

Serve with sugar free syrup.
