Apricot Pancakes

Ingredients:

25 apricots
1 c. Splenda
1 tbsp cinnamon
Pancake mix of your choice (low carb, whole grain, etc.)

Clean apricots and remove pits. Place in medium sauce pan on low heat. Add splenda and cinnamon and stir till mixture begins to boil.
Make pancakes according to directions on box.
Add 1 -2 Tbsp of Apricot jam on top of pancakes. Add cool whip and sugar free syrup onto pancakes if desired.

Lazy method: Buy sugar free apricot jelly. Put 2 tbsp into microwave safe container and warm.
